Skillet Marinated Mahi Mahi

This Skillet Marinated Mahi Mahi is a delicious meal!

INGREDIENTS:
4 (4 to 6 ounce) Mahi Mahi fillets
1 lemon, zested and juiced
¼ cup chopped fresh basil
¼ cup olive oil
Black pepper, freshly ground
1 tablespoon butter
DIRECTIONS:
- Mix together the lemon zest, lemon juice, basil, oil and pepper. Pour over fish and let rest for 30 minutes.
- Melt 1 tablespoon of butter in a large skillet over medium heat. Sauté the fish for 4 to 5 minutes on each side. If you have to do this in batches, you can add more butter to the skillet to cook the remaining fillets.
